Our experience with Chef Olav was fantastic. He combines unexpected flavors into combinations that are sure to be enjoyed by all. From the family style breakfasts, delicious lunches, and beautifully plated dinners and desserts, his creativity and unique “world fusion” is evident in his cooking. A favorite item of mine was the coconut polenta with creole sauce, and the vanilla ice cream served in a quarter of a pineapple shell with fresh chocolate shavings on top. Highly recommend!

Chef Olav is amazing! We can reliably say our vacation would not have been nearly as wonderful without Chef Olav. He and his lovely assistant, Jeadralica, make a wonderful team. Chef Olav‘s cooking is delicious and top notch while his personality and work ethic are equally incredible.  He got to know our large family within a day of being there and quickly learned our disparate likes and dislikes. For two days, we had a chef who consisted of a mix of compassion, humor and elegant cooking. His name is Chef Olav. All of his meals brought something new to the table and my taste buds. From Dutch apple bacon pancakes to tuna carpaccio, every meal was a wonderful experience. The place setting was elegant, but not overwhelming in the slightest. Chef Olav prepared and served a phenomenal feast to celebrate my and my husband’s 50th birthday and first night in Saint Martin. It was exactly what I asked for and more. Everyone in my group of 8 agreed there was not one dish that we didn’t like. Everything was delicious! It was hard to top this meal during the rest of our 5 night stay. Next time we will skip the restaurants and have Chef Olav feed us the entire trip!

On our trip to Curaçao, I had the pleasure of meeting and working with Lisa and Olav as our personal chefs for many of our meals. We were a group of 9 with many varied dietary restrictions. My diet was the most restrictive. I only use certain oils for cooking and I eat no grains that includes no bread or pasta. Lisa understood my dietary needs and she made fabulous food for our whole group. We still talk about the meatballs she made us one evening. If you have a chance to hire Lisa and Olav, they are amazing chefs that understand and work with all the different dietary needs. They are also two of the nicest and most giving people I have met on my travels. They answered all our questions, concerns and gave us help finding things on the island as well. We would always hire them on our return trips.

Olav & Lisa’s dinners are a MUST for your Caribbean vacation. A fusion of local cuisine and personal touches, they use delicious local and fresh ingredients to create unique and inspired menus. They also added music, decorations, and an incredibly warm personality to make our meal a work of art. We loved every bite!

Thank you!!! Chef Olav and Lisa heightened our experience ten-fold. We had a group of 15 adults on a strict week-long vegetarian and vegan diet for our corporate yoga/wellness retreat in St. Maarten. The food was absolutely delicious from the first bite to the last morsel – we were licking our plates clean! They both went above and beyond to ensure that our meals were on time and adjusted to our schedule changes with ease, including taking their personal time to bring us some spice jars and water. Their plant-forward and blue zone inspired meals were a hit with everyone and expanded our knowledge and understanding that food doesn’t need to be bland to be good for you! They understood our unique requirements and none of the carnivores missed meat for a second. Most of the meals were vegan which made our strict vegan guest feel included and welcome which was very much appreciated! It also inspired the rest of the team to be more plant-forward. The unique combination of local flavours and Dutch-inspired dishes (please more apple pancakes and creole sauce!) are still a topic of conversation with our group as we have sub-par attempts to recreate them. The food was bridled only by the amazing company of this couple. They are truly beautiful souls and became part of our extended work family and will be lifelong friends and inspirations to all of us. We were so happy for Lisa to join in our sessions and provide additional insight and wisdom! Jaya to the Chefs – thank you so much for an incredible week!
